On top of being one of the most versatile cookers around, Gateway Drum Smokers are capable of doing some heavy-duty smoking. These 55-gallon drum smokers can hold up to four pork butts or one large brisket per grate, and they can even handle 12-16 rib racks with the optional Rib Hanger Kit. Such food usually calls for longer cook times, which is why Gateway designed its removable fire basket to fit about 10 pounds of lump charcoal for up to 14 hours of smoking. To monitor your internal temperature simply check the handy, center-mounted thermometer.

No matter what you’re cooking in your Gateway smoker, you can expect tender and juicy results every time. Somewhere between 250-325 degrees is the sweet spot for maximum vaporization, but if you prefer to cook hot and fast, 300 degrees is the optimal temperature for searing and baking. Fortunately, finding that exact temperature is quick and easy with Gateway’s dual adjustable air intake pipes and top exhaust line.

These smokers are also highly durable and portable. Gateway smokers are delivered fully assembled to save you time and ensure they stand up to all elements and seasons, while the included caster wheels can be attached for convenient mobility. Keep in mind that seasoning is recommended before first use and after deep cleanings. Just use cooking spray to coat the inside of the lid and walls of your smoker, then heat at 300 degrees for one hour to sterilize and help seal in flavor.

Gateway smokers come with a 21½-inch, plated-steel cooking grate that offers 462 square inches of cooking space, but you can reach as many as 1,386 square inches with additional grates on the other two levels.
